The island of Fuerteventura, renowned for its rich history, has cultivated a variety of cereals since ancient times, dating back to prehistory. This enduring tradition highlights the island’s deep connection with agriculture and nourishment.

The story unfolds through the myriad of systems used to grind these cereals: from simple mortars and hand mills to the majestic windmills, bakeries, and full-scale mills. Each method reflects a different era and technological advancement, shaping the island’s culinary and cultural identity.

Central to this history is the story of gofio, one of the quintessential products of the Canary Islands. This traditional toasted cereal flour has been a dietary staple for generations, symbolising the resilience and resourcefulness of the local people.
